Pastel Deviled Eggs

I saw these on Pinterest and just had to try them. When I went to make them I discovered that I didn't have any red food coloring :-(   So, the eggs are all blue and green!
I boiled the eggs, cooled and peeled them, cut them in half and removed the yolks. I had prepared several cups of water and food coloring (I didn't use the vinegar). I placed several halves in each cup of colored water and soaked them for an hour or so. I probably would have left them longer except it was already late and I needed to get the eggs done and go to bed. I removed the egg halves and drained them on paper towel. I then used the following recipe to devil the yolks...

  • 13 hard boiled eggs, peeled
  • 1/3 – 1/2 cup mayonnaise (Hellmans or Best Foods)
  • 1-2 teaspoons cider vinegar
  • 1-2 teaspoons dill pickle juice
  • 1-2 teaspoons yellow mustard
  • Paprika for garnish
After preparing the filling, I used my Pampered Chef  Easy Decorator to pipe the filling into the halves and arranged them on a doily-covered tray. They were a big hit at our dinner the next day! So fun!!
